Ground Chicken Patties Recipe

- 20 oz skinless boneless chicken thigh
- 2 oz onion diced
- 1/4 cup coriander chopped
- 2 tbsp parsley chopped
- 3 tbsp olive oil divided
- 1 tbsp garlic minced
- 1 tsp garlic powder
- 2 tbsp all-purpose flour
- 1/2 cup plain panko breadcrumbs
- 12 oz asparagus
- 12 oz sweet potato sliced
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1 tsp paprika
- 1 medium egg
- 1 tbsp Heinz ketchup
- 2 tbsp Japanese mayonnaise
INSTRUCTIONS
Prep:
Prepare the ground chicken: Cut 20 oz skinless boneless chicken thigh into small pieces for easier grinding. Then grind the chicken in a food processor until smooth.
Peel around the woody ends of the asparagus with a paring knife or a peeler.
Cut the sweet potato: Peel off the skin of the sweet potato and cut it in half crosswise. Cut each half into halves again to make quarters. Place each quarter cut-side down, then cut across them to make 1/4’’ slices. Rinse through the slices with clean water and let dry.
Dice the onion: Half the onion lengthwise and peel the skin. Make vertical slices 1/8" apart from each other towards the root, but leave about 1/8" so they're still intact. Turn the half 90 degrees, and grip the root. From the bottom, make horizontal cuts 1/8" apart from each other into the onion, also leaving 1/8" to keep everything intact. Slice the onion to have even cubes.
Peel and mince the garlic: Cut to remove the root part of each garlic clove and mash them down with a knife to remove the peel with ease. Mince the peeled cloves.
Finely chop the parsley.
Finely chop the coriander.
Cook:
Mix the ground chicken with other ingredients: Add to the ground chicken with 1/2 tsp salt, 2 oz onion, 1/4 cup coriander, 1 tsp garlic powder, 1 tbsp garlic, 1/2 tsp ground black pepper, 1 tsp paprika, 2 tbsp all-purpose flour, 1 medium egg, and 1/2 cup plain panko breadcrumbs. Mix by hand or with a preferred utensil until the mixture is well-combined.

Make the patties: Divide the mixture into 8 even parts, then shape the patties with hands.

Marinate 12 oz sweet potatoes in 1 tbsp olive oil.

Air-fry the sweet potatoes: Place the sweet potatoes in an air fryer and cook at 400°F for 15 minutes.

Make the sauce: In a small bowl, mix together 2 tbsp Japanese mayonnaise and 1 tbsp Heinz ketchup.

Pan-sear the patties: In a pan over low heat, add 1 tbsp olive oil and the patties. Pan-sear both sides of the patties for a total of 10 minutes until golden brown. Remove from the heat and set aside.

Pan-sear the asparagus: In the same pan, add 1 tbsp olive oil and 12 oz asparagus. Pan-sear them for 5 minutes, then remove from the heat.

Plate and serve: Serve the patties with asparagus and sweet potatoes. Garnish with 2 tbsp parsley on top.
