Ingredients (13)
- 6 oz skinless boneless chicken breast
- 6 oz celery chopped
- 2 oz red onion diced
- 1 oz pickle relish diced
- 1/3 cup pecans chopped
- 1/3 cup dried cranberries halved
- 1/2 tbsp olive oil
- 1/2 tsp ground black pepper divided
- 1/8 tsp salt
- 1 tsp traditional Dijon mustard
- 3 tbsp plain Greek yogurt
- 2 tbsp Japanese mayonnaise
- 2 tbsp parsley for garnishing
INSTRUCTIONS

Rub the 6 oz chicken breast with 1/4 tsp ground black pepper, and 1/8 tsp salt. Let rest for 5 minutes.

Heat 1/2 tbsp olive oil over medium-low heat. Sear the chicken until golden on both sides.

Remove from heat, allow to cool down, and chop into bite-sized chunks.

Make the dressing: In a small bowl, whisk together the 1 tsp mustard, 3 tbsp Greek yogurt, 2 tbsp mayonnaise, and 1/4 tsp ground black pepper.

Toss the chicken chunks, 6 oz celery, 1/3 cup pecans, 2 oz red onion, 1 oz pickle relish, and 1/3 cup cranberries together with the dressing.

Transfer the chicken salad onto serving plates, sprinkle with parsley, and serve.
