Ingredients (10)
- 3 large eggs hard-boiled, yolks and whites separated
- 7 oz elbow noodles cooked
- 2 oz celery finely chopped
- 1 oz red onion finely chopped
- 2 tbsp scallion finely chopped
- 4 tbsp Japanese mayonnaise
- 2 tsp traditional Dijon mustard
- 2 tbsp plain Greek yogurt
- 1/2 tsp paprika
- 1/2 tsp pepper
INSTRUCTIONS

Add 4 tbsp Japanese mayonnaise, 2 tsp Dijon mustard, 2 tbsp Greek yogurt, egg yolks, and 1/2 tsp pepper in a bowl.

Mix well to make the dressing.

Toss 2 oz celery, 1 oz red onion, 2 tbsp scallion, 7 oz elbow noodles, and egg whites with the dressing.

Serve, garnish with paprika, and enjoy.
