  • 12 oz canned chickpeas
  • 6 oz tomatoes diced
  • 4 oz cucumber diced
  • 1 oz red onion finely diced
  • 1 oz almond sliced
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp Italian seasonings
  • 1/2 tsp oregano
  • 1/4 tsp ground black pepper
  • 1 tsp traditional Dijon mustard
  • 1/4 tsp salt
  • 1 tbsp parsley
  • 0.5 oz feta cheese crumbled

INSTRUCTIONS

Make the vinaigrette: In a small bowl, combine 3 tbsp olive oil, 1 tbsp lemon juice, 1 tsp Italian seasonings, 1/2 tsp oregano, 1/4 tsp ground black pepper, 1 tsp Dijon mustard, and 1/4 tsp salt. Whisk until well blended.
