- 10 oz potatoes halved
- 4 oz cherry tomatoes halved
- 4 oz romaine lettuce chopped
- 4 oz cucumber unpeeled, sliced
- 1 oz red bell pepper julienned
- 1 oz red onion sliced
- 1 oz black olives pitted, sliced
- 0.5 oz feta cheese crumbled
- 1 tsp garlic minced
- 1/2 tsp dried oregano
- 1/2 tsp pepper
- 1/4 tsp salt
- 2 tbsp olive oil
- 2 tbsp red wine vinegar

In a microwave-safe bowl covered with a plastic wrap, microwave 10 oz potatoes on full power for 12 minutes.

In the meantime, make the dressing by mixing 1 tsp garlic, 2 tbsp red wine vinegar, 1/2 tsp dried oregano, 2 tbsp olive oil, 1/2 tsp pepper, and 1/4 tsp salt until combined.

Lay 4 oz romaine lettuce, 1 oz red bell pepper, 4 oz cherry tomato, 1 oz red onion, 4 oz cucumber, 1 oz black olives, potatoes on a plate. Garnish with 0.5 oz feta cheese.
