Ingredients (12)

  • 10 oz tomatoes seeds removed and diced
  • 6 oz avocado cut into cubes
  • 4 oz cucumber seeds removed and diced
  • 3 oz celery diced
  • 2 oz red onions diced
  • 0.5 oz coriander roughly chopped
  • 0.5 oz jalapeno finely diced
  • 2 1/2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 2 tsp traditional Dijon mustard
  • 1 tsp lemon juice
  • 1/4 tsp salt

INSTRUCTIONS

In a small bowl, whisk together 2 1/2 tbsp olive oil, 2 tbsp balsamic vinegar, 2 tsp mustard, 1 tsp lemon juice, and 1/4 tsp salt.

1 Make the dressing kachumbari

Toss the following in a salad bowl: 10 oz tomatoes, 6 oz avocado, 4 oz cucumber, 3 oz celery, 2 oz red onions, 0.5 oz coriander, and 0.5 oz jalapenos.

Place the veg in a bowl kachumbari

Keep the two covered and separated in the fridge until serving. To serve, drizzle the dressing onto the veg and give it a toss.
