Instant Pot Shrimp Scampi Recipe

Ingredients (14)

  • 13 oz peeled and deveined shrimp equal to 25 oz raw shrimp
  • 7 oz uncooked spaghetti
  • 3 fl oz white wine
  • 0.5 oz parmesan cheese shredded
  • 4 cups water for boiling
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 tbsp garlic minced
  • 1/2 tsp black pepper
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/2 tsp cayenne
  • 1/4 tsp scallions
  • 1/2 tsp red pepper flakes

INSTRUCTIONS

Turn on the Instant Pot on Sauté Mode. Pour in 4 cups of water and bring to a boil. Stir in 7 oz uncooked spaghetti and cook for 7 minutes or until al dente. Drain the pasta and set aside.

Clean the Instant Pot. Turn on the Sauté Mode. Then add 1 tbsp olive oil, 3 tbsp unsalted butter, and 2 tbsp garlic and sauté for about 30 seconds until fragrant.

Add in 13 oz peeled shrimp, 1/2 tsp black pepper, 1 tbsp lemon juice, 1/2 tsp salt, and 1/2 tsp cayenne. Stir and cook for 3 minutes.

Add 3 fl oz white wine and stir occasionally for an extra minute.

Stir in the boiled spaghetti and stir to evenly coat the sauce, 2 minutes.

Turn off the Instant Pot. Sprinkle 0.5 oz parmesan cheese, 1/4 tsp scallions, and 1/2 tsp red pepper flakes.

Serve the dish hot.
