Ingredients

  • 24 oz cucumbers raw
  • 0.5 oz ginger about 1-inch knob, peeled
  • 1/2 cup coconut water
  • 1 tbsp lime juice
  • 2 tbsp sugar
  • 8 mint leaves

Instructions

  • Rinse and drain cucumbers. Pat dry with a kitchen towel. Cut cucumbers in half, lengthwise. Remove the seeds with a spoon. Cut into chunks and set aside.
  • Put cucumbers and ginger through a juicer to extract the juice.
  • In a pitcher, add cucumber juice, coconut water, lime juice, and sugar. Stir well.
  • To serve, divide the drink into 4 glasses. Garnish with mint leaves and enjoy.
