  • Rub the chicken breast with 1/4 teaspoon of ground black pepper, and salt. Let rest for 5 minutes.
  • Heat 1/2 tablespoon of olive oil over medium-low heat. Sear the chicken until golden on both sides. Remove from heat, allow to cool down, and chop into bite-sized chunks.
  • Make the dressing: In a small bowl, whisk together the mustard, Greek yogurt, mayonnaise, and 1/4 teaspoon of ground black pepper.
  • Toss the chicken chunks, celery, pecans, red onion, pickle relish, and cranberries together with the dressing.
  • Transfer the chicken salad onto serving plates, sprinkle with parsley, and serve.
