- 1 tbsp olive oil
- 1/4 tsp salt
- 1/2 tbsp lime juice
- 1 tbsp parsley chopped
- 1 tbsp cilantro chopped
- 1/4 tsp traditional Dijon mustard
- 1/4 tsp ground pepper
- 1 tsp garlic chopped
- 1/2 tbsp red wine vinegar
- 1/4 tsp dried oregano
- 1/2 tsp honey
- 8 oz cucumbers cubed
- 6 oz cherry tomatoes halved
- 1 oz red onions sliced
- 12 oz avocados cubed
Make the dressing: in a small bowl, whisk together olive oil, salt, lime juice, parsley, cilantro, mustard, ground pepper, garlic, vinegar, oregano, and honey.
Place avocados, tomatoes, onions, cucumbers on a plate. Pour the dressing over the top and gently toss to coat.
Serve.
