Ingredients

  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/2 tbsp lime juice
  • 1 tbsp parsley chopped
  • 1 tbsp cilantro chopped
  • 1/4 tsp traditional Dijon mustard
  • 1/4 tsp ground pepper
  • 1 tsp garlic chopped
  • 1/2 tbsp red wine vinegar
  • 1/4 tsp dried oregano
  • 1/2 tsp honey
  • 8 oz cucumbers cubed
  • 6 oz cherry tomatoes halved
  • 1 oz red onions sliced
  • 12 oz avocados cubed

Instructions

  • Make the dressing: in a small bowl, whisk together olive oil, salt, lime juice, parsley, cilantro, mustard, ground pepper, garlic, vinegar, oregano, and honey.
    Make the avocado salad dressing
  • Place avocados, tomatoes, onions, cucumbers on a plate. Pour the dressing over the top and gently toss to coat.
    Toss fruits and veggies with dressing
