Pea Salad Recipe
Featuring green peas, onion, cheddar cheese, bacon, and a creamy, tangy dressing, this easy pea salad recipe gives you the solution for potlucks, cookouts, BBQs, or any large gatherings. The salad can be made up to several days in advance and pairs perfectly with any grilled dishes.
Servings: 4 servings
- 2 cups frozen peas thawed
- 2 tbsp Japanese mayonnaise
- 2 tbsp sour cream
- 1 tsp apple cider vinegar
- 1/8 tsp ground black pepper
- 1/8 tsp salt
- 1/2 tsp lemon juice
- 1/2 tsp sugar
- 1 tbsp parsley divided
- 2 cups water
- 1/4 cup red onion sliced
- 3/4 oz cheddar cheese shredded
- 1/2 oz baked bacon sliced crosswise into 1/2 inch pieces
Make the dressing: In a large bowl, add mayonnaise, sour cream, apple cider vinegar, salt, ground black pepper, lemon juice, sugar, and 1/2 tablespoon of parsley. Whisk to combine.
Add the peas and water to a medium saucepan. Bring it to a simmer over medium heat for 5 minutes. Drain the peas and set them aside.
Add peas, onion, cheddar cheese, and bacon to the dressing bowl. Toss to coat evenly.
Sprinkle the remaining parsley on top. Serve immediately or chill in the fridge for a while and enjoy it cold.
