  • 20 oz potatoes 4 potatoes
  • 1/2 tsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp ground pepper
  • 1/4 cup plain Greek yogurt
  • 1/4 tsp thyme
  • 1 tbsp scallion
  • 1 tbsp unsalted butter
  • 2 tbsp shredded cheddar cheese
  • 0.75 oz oven-baked bacon
  • 1 tsp cilantro


  • Use a fork to pierce the skin of each potato in several places. Then brush the olive oil onto the skin.
    step 1: Pierce potatoes and rub with oil.
  • Place potatoes in the basket of an air fryer and cook at 360°F for 40 minutes.
    step 2: First bake
  • Remove potatoes from the basket and let them cool down. Then cut along the top of them and scoop out the flesh inside.
    step 3: Scoop out the potato flesh
  • In a bowl, add the potato flesh, salt, pepper, yogurt, thyme, scallion, butter, 1 tbsp cheddar cheese, and 0.5 oz bacon. Mash filling until smooth.
    step 4: Make the filling
  • Spoon the filling back into the potato skin. Top the potatoes with the remaining cheese and bacon.

  • Return the potatoes to the air fryer and cook at 400°F for 5 minutes.
    step 6: Second bake
  • Remove the potatoes from the air fryer. Garnish with cilantro and serve.
