  • Fill a medium-sized pot with water and bring to a boil. Add green beans and boil for 2 minutes. Remove the green beans and toss them in a bowl of ice water so they cool quickly.
  • Mix sauce: In a small bowl, add lemon juice, salt, pepper, sugar, olive oil, and mustard. Mix well.
  • Add the cooked green beans, celery, onion, kidney beans, chickpeas, feta cheese, and coriander in a bigger bowl. Add the sauce and mix to evenly coat ingredients.
  • Serve. (This salad tastes better served cold, so you can chill it for 30 minutes before serving if desired.)
