  • 18 oz skinless boneless chicken thighs cubed
  • 1 tbsp garlic minced
  • 2 tsp ginger grated
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1/2 tsp paprika
  • 2 tsp sesame oil
  • 1 tbsp sriracha
  • 2 tbsp reduced-sodium soy sauce
  • 1 tbsp traditional Dijon mustard
  • 1/2 tsp red pepper flakes divided
  • 1/4 tsp ground black pepper
  • 2 tsp cornstarch
  • 1/2 cup unsalted chicken broth
  • 1 tbsp sesame seeds
  • 2 tbsp scallions chopped
  • 3 cups medium-grain white rice cooked


  • On the “Sauté” setting, sauté 1 tbsp minced garlic and 2 tsp grated ginger in 2 tbsp olive oil until fragrant.
    Step 1: Sauté garlic and ginger in heated olive oil until fragrant.
  • Add 18 oz cubed chicken thighs to the pot and stir occasionally for about 2 minutes.
    Step 2: Add chicken to the pot and stir occasionally.
  • Add 2 tbsp honey, 1/2 tsp paprika, 2 tsp sesame oil, 1 tbsp sriracha, 2 tbsp soy sauce, 1 tbsp mustard, 1/4 tsp red pepper flakes, and 1/4 tsp ground black pepper. Stir.
    Step 3: Add the sauces and seasonings. Stir.
  • In a bowl, dissolve 2 tsp cornstarch in 1/2 cup unsalted chicken broth and add to the Instant Pot. Cook on “Sauté” setting for 10 minutes until the sauce thickens.
    Step 4: Dissolve cornstarch in chicken broth and add to the pot. Cook until the sauce thickens.
  • Sprinkle 1 tbsp sesame seeds, 1/4 tsp red pepper flakes, and 2 tbsp scallions on top. Serve hot over rice.
    Step 5: Garnish and serve sesame chicken hot over rice.
