Quick and Easy Ground Beef and Cabbage Recipe

Ingredients (16)
- 12 oz 85% lean ground beef
- 10 oz raw cabbage chopped
- 2 oz carrot julienned
- 2 oz yellow onion sliced
- 1 1/2 tbsp olive oil divided
- 1 tbsp garlic minced
- 1 tsp paprika
- 1/4 tsp salt
- 1/2 tsp ground black pepper
- 1/2 tbsp sesame oil
- 2 tbsp reduced-sodium soy sauce
- 1 1/2 tsp sriracha
- 2 tbsp coriander chopped
- 2 tbsp scallion chopped
- 1 tsp red pepper flakes
- 3 1/2 cup cooked medium-grain white rice
INSTRUCTIONS
Heat 1 tbsp olive oil in a large skillet over medium heat. Sauté 10 oz raw cabbage, 2 oz carrot, and 2 oz yellow onion for 5 minutes until softened. Transfer to a bowl and set aside.

Continue to add 1/2 tbsp olive oil and sauté 1 tbsp minced garlic for 30 seconds.

Add 12 oz ground beef, 1 tsp paprika, 1/4 tsp salt, 1/2 tsp ground black pepper, 1/2 tbsp sesame oil, 2 tbsp reduced-sodium soy sauce, and 1 1/2 tsp sriracha to the skillet. Gently break up the ground beef with a wooden spoon as it browns, about 7 minutes.

Return the sautéed vegetables to the skillet. Quickly stir for 1 minute and then turn off the heat.

Sprinkle 2 tbsp chopped coriander on top and give it another stir through the beef.

Taste and season with 2 tbsp chopped scallion and 1 tsp red pepper flakes.

Portion out. Serve hot on a bed of cooked white rice.
