Mashed Cauliflower Recipe

This mashed cauliflower recipe is a great solution if you're craving mashed potatoes and looking for something similar. It tastes unbelievably good.

Ingredients (12)

  • 22 oz cauliflower cut into florets
  • 0.5 oz parmesan grated
  • 1 tbsp sour cream
  • 1 cup water
  • 1 tbsp olive oil divided
  • 1 tbsp unsalted butter
  • 1 tsp thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp ground black pepper
  • 1/4 tsp salt
  • 1/4 tsp paprika
  • 1 tbsp parsley finely chopped

INSTRUCTIONS

Add 1 cup water and 22 oz cauliflower to a pot and boil for 6 minutes.

Drain the cauliflower. Place a large sieve over a pot and place the cauliflower into it. Allow excess water to drain off before blending.

Add the dried cauliflower into a bowl with 1 tbsp unsalted butter, 1 tbsp sour cream, 1/2 tbsp olive oil, 0.5 oz parmesan, 1/4 tsp salt, 1/4 tsp paprika, 1 tsp thyme, 1/2 tsp garlic powder, and 1/2 tsp ground black pepper.

Use an immersion blender to blend until smooth.

Add the mash to a bowl and sprinkle it with paprika, 1 tbsp parsley, and the remaining 1/2 tbsp olive oil. Serve.
