Grilled Chicken Salad with Grapes Recipe

- 8 oz skinless boneless chicken breast
- 8 oz seedless red grapes halved
- 1 oz red onion sliced
- 4 oz lettuce mix
- 0.5 oz crumbled feta cheese
- 3 tbsp olive oil divided
- 2 tbsp balsamic vinegar
- 1 tbsp honey
- 2 tsp Dijon mustard
- 1/4 tsp salt
- 1/2 tsp paprika
- 2 tbsp parsley chopped
- 1/2 tsp garlic powder
INSTRUCTIONS
Prep:
Slice the onion: Half the onion lengthwise and slice off the root and head. Grip the half by the side and make 1/8" slices across the half.
Cut the seedless red grapes into halves.
Finely chop the parsley.
Cook:
Make the sauce: In a small mixing bowl, add 2 tbsp olive oil, 2 tbsp balsamic vinegar, 1/4 tsp salt, 1 tbsp honey, and 2 tsp Dijon mustard. Stir well.

Season the chicken: Add 1/2 tsp paprika and 1/2 tsp garlic powder to 8 oz skinless boneless chicken breast. Rub the meat with the seasonings to coat evenly.

Pan-sear the chicken: In a skillet over low heat, add 1 tbsp olive oil. When the oil is hot and ready, add the chicken and pan-sear both sides for a total of 10 minutes.

Cut the chicken into slices: Let the chicken rest for 2-3 minutes on a cutting board, then cut it into 1/2-inch slices.

Assemble the salad ingredients: Line the bottom of the serving plates with 4 oz lettuce mix, then add 8 oz seedless red grape, chicken slices, and red onion.

Garnish and serve: Sprinkle with 0.5 oz crumbled feta cheese and 2 tbsp parsley, then drizzle with the sauce before serving. Enjoy!
