Sweet Potato Casserole Recipe

Ingredients (13)

  • 2 1/2 lb sweet potato puree
  • 2 cup mini marshmallows
  • 2 tbsp flour
  • 1/2 cup pecan chopped
  • 1/4 cup whole milk
  • 1/4 cup unsalted butter at room temperature
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 eggs
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 tsp vanilla
  • 1 1/2 tsp unsalted butter cubes cold

INSTRUCTIONS

Preheat the oven to 350°F.

In a large bowl, add 2 1/2 lb sweet potato puree. Next add the 1/4 cup milk, 1/4 cup softened unsalted butter, 1/2 tsp cinnamon, 2 eggs, 1/4 cup of the brown sugar, 1/4 cup granulated sugar, 1/4 tsp vanilla, and 1/2 tsp salt. Mix well.

Pour mixture in a casserole or baking dish; spread into an even layer.

Place 2 tbsp flour, 1 1/2 tsp cold butter, the remaining brown sugar (1/4 cup), and 1/2 cup pecans into a bowl. Use a fork to stir ingredients together well.

Sprinkle the topping over the sweet potato mixture in the baking dish.

Bake for about 30 minutes until the top is golden and the mixture is warmed all the way through.

Scatter 2 cup mini marshmallows in a single layer on top and put back in the oven for about 5 minutes. Watch the casserole closely as marshmallows can burn quickly!

Serve immediately, while still warm.
