Air Fryer Peruvian Chicken Recipe

Ingredients (20)
- 24 oz boneless skin-on chicken breast
- 4 oz crystal lettuce chopped
- 4 oz cucumber sliced
- 1 oz yellow bell pepper sliced
- 1 oz radish sliced
- 0.5 oz jalapeno chopped
- 3 tbsp olive oil divided
- 1/2 cup cilantro
- 2 tsp garlic minced
- 1 garlic clove
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp Cajun seasoning
- 1/2 tsp salt divided
- 1/2 tsp black pepper
- 1/2 tsp oregano
- 1 tsp lemon juice
- 2 tsp lime juice
- 3 tbsp Japanese mayonnaise
- 2 tbsp parsley
INSTRUCTIONS
Butterfly 24 oz chicken breast.
Rub the chicken breast evenly with 2 tsp garlic, 1 tsp ground cumin, 1 tsp paprika, 1/2 tbsp olive oil, 1/4 tsp salt, 1/2 tsp black pepper, 1/2 tsp Cajun seasoning, 1/2 tsp oregano, and 1 tsp lemon juice. Marinate for 5 minutes.
Air fry the chicken at 375 ℉ for 20 minutes.
Meanwhile, make the sauce: Add 1/2 cup cilantro, 1/4 tsp salt, 2 1/2 tbsp olive oil, 2 tsp lime juice, 1 garlic clove, 0.5 oz jalapeno, and 3 tbsp Kewpie mayonnaise into a food processor. Blend until smooth.
Remove the chicken from the air fryer. Assemble 1 oz radish, 1 oz yellow bell pepper, 4 oz crystal lettuce, and 4 oz cucumber onto a plate. Serve the chicken with prepared sauce and the salad.
