Healthy Instant Pot Sesame Chicken Recipe

Ingredients (17)
- 18 oz skinless boneless chicken thighs cubed
- 1 tbsp sesame seeds
- 1/2 cup unsalted chicken broth
- 1 tbsp garlic minced
- 2 tsp ginger grated
- 2 tbsp olive oil
- 2 tbsp honey
- 1/2 tsp paprika
- 2 tsp sesame oil
- 1 tbsp sriracha
- 2 tbsp reduced-sodium soy sauce
- 1 tbsp traditional Dijon mustard
- 1/2 tsp red pepper flakes divided
- 1/4 tsp ground black pepper
- 2 tsp cornstarch
- 2 tbsp scallions chopped
- 3 cups medium-grain white rice cooked
INSTRUCTIONS

On the “Sauté” setting, sauté 1 tbsp minced garlic and 2 tsp grated ginger in 2 tbsp olive oil until fragrant.

Add 18 oz cubed chicken thighs to the pot and stir occasionally for about 2 minutes.

Add 2 tbsp honey, 1/2 tsp paprika, 2 tsp sesame oil, 1 tbsp sriracha, 2 tbsp soy sauce, 1 tbsp mustard, 1/4 tsp red pepper flakes, and 1/4 tsp ground black pepper. Stir.

In a bowl, dissolve 2 tsp cornstarch in 1/2 cup unsalted chicken broth and add to the Instant Pot. Cook on “Sauté” setting for 10 minutes until the sauce thickens.

Sprinkle 1 tbsp sesame seeds, 1/4 tsp red pepper flakes, and 2 tbsp scallions on top. Serve hot over rice.
