Ingredients (13)

  • 10 oz skinless salmon
  • 2 oz onion diced
  • 1 medium egg
  • 1/4 cup scallion diced
  • 1/4 cup plain panko breadcrumb
  • 2 tbsp all-purpose flour
  • 1/2 cup canola oil *
  • 1 1/2 tsp cajun seasoning
  • 1 tsp lemon juice
  • 3 tbsp Japanese mayonnaise divided
  • 2 tbsp plain Greek yogurt
  • 1/2 tsp pepper
  • 2 tbsp parsley chopped and divided

INSTRUCTIONS

Prep

1

For the salmon: Rinse the salmon fillet with clean water, then pat dry using a paper towel to prevent a mushy texture. Cut the fillet into small pieces about 1 to 2 inches and place into a glass bowl (for microwaving).

Cook

1

Microwave the salmon: Add 10 oz salmon cubes to a bowl, cover with plastic food wrap, then microwave for 5 minutes.

2

Mash the salmon: Use a fork to mash the salmon until it reaches the same consistency as in the clip.

3

Mix the salmon with other ingredients: Add to the mashed salmon 1/2 tsp pepper, 1 tsp lemon juice, 2 oz onion, 1 tbsp parsley, 1 medium egg, 1/4 cup plain panko breadcrumb, 1 tbsp Japanese mayonnaise, 1/4 cup scallion, 1 1/2 tsp cajun seasoning, and 2 tbsp flour. Gently stir to mix.

4

Shape the patties: Use your hand to form the salmon patties.

5

Fry the patties: Add 1/2 cup canola oil to a frying pan and let it simmer over medium heat, then place the salmon patties in. Deep fry the patties for a total of 4 minutes, with 2 minutes on each side. When the patties turn golden brown and crispy on both sides, transfer them to a serving plate.

6

Make the sauce: Add 2 tbsp mayonnaise and 2 tbsp plain Greek yogurt to a small bowl, then mix well.

7

Garnish and serve: Garnish the patties with parsley and drizzle the sauce over before serving.

8

Enjoy!

Only part of the oil will end up in the final product, and we have calculated nutritional values based on that amount. The whole amount is needed for frying, but what actually ends up being consumed is 1 tbsp of canola oil for four servings.
