Split Pea Soup Recipe

If you have a soft spot for soup, I'm sure you'll love this split pea soup recipe as much as we do. My family adores the mild and savory flavors of the soup, as well as its soft texture. It's easy to make, stores well for leftovers, and has all the soothing and comforting qualities you are looking for in a soup.

Ingredients (13)

  • 6 oz green split peas
  • 1/2 tbsp unsalted butter
  • 2 oz onion chopped
  • 1 oz celery chopped
  • 1 oz carrot chopped
  • 1 tsp bay leaf
  • 1 tsp garlic
  • 1/4 tsp salt
  • 3 tbsp heavy cream
  • 3 cups unsalted chicken broth
  • 0.4 oz bacon baked
  • 1 oz baguette baked
  • 3 cups water

INSTRUCTIONS

1

In a small soup pot, bring 3 cups of water and 6 oz green split peas to a boil, and boil for 20 minutes. Then drain the peas in a mesh strainer.

2

Heat 1/2 tbsp butter in a large pot over low heat. Add 1 oz carrot, 1 oz celery, 1 tsp garlic, and 2 oz onion. Cook and stir often for 5 minutes or until vegetables are softened.

3

Add split peas and 1 tsp bay leaf, and continue stirring until combined.

4

Stir in 3 cup chicken broth and 3 tbsp heavy cream, bring to a boil. Season with 1/4 tsp salt.

5

Cover the pot, reduce the heat, and simmer for 25 minutes, until the split peas are soft and falling apart and the soup is thickened to desired consistency.

6

Remember to stir occasionally, and more frequently once the soup starts to thicken.

7

Remove from heat and blend with an immersion blender.

8

Pour soup into bowls. Top with the cooked bacon and the baked baguette.
