Ingredients (11)

  • 8 oz broccoli
  • 2 oz red onion diced
  • 1 oz baked bacon crumbled
  • 1 oz dried cranberries
  • 1 oz sliced almond
  • 1 oz cashew
  • 1 oz walnuts
  • 4 tbsp plain Greek yogurt
  • 1 tbsp white sugar
  • 4 tsp lemon juice
  • 1/8 tsp salt

INSTRUCTIONS

1

Bring a pot of water to the boil. While you wait, cut the broccoli into florets. Add 8 oz broccoli florets into the boiling water and cook for 1 minute.

2

Remove and immediately soak the broccoli florets in the ice water until cool. Drain them well.

3

In a small bowl, mix together 4 tbsp yogurt, 1 tbsp sugar, 1/8 tsp salt and 4 tsp lemon juice. Stir well until smooth.

4

In a large bowl, add broccoli florets, 2 oz red onion, 1 oz bacon, 1 oz dried cranberries, and all the nuts (1 oz sliced almond, 1 oz cashew, 1 oz walnuts). Drizzle the dressing over the broccoli combination and toss all the ingredients.

5

Let the salad cool (I like to let it sit in the fridge for an hour but this is not necessary) and serve.
