Ingredients (20)

  • 17 oz skinless boneless salmon roughly chopped
  • 4 hamburger buns
  • 1 medium egg
  • 2 oz baby arugula
  • 1 oz red onion sliced
  • 4 oz tomato sliced
  • 1/4 cup plain panko breadcrumbs
  • 0.5 oz scallions chopped
  • 0.5 oz cilantro chopped
  • 0.5 oz parsley chopped
  • 2 1/2 tbsp unsalted butter divided into 1 and 1 1/2
  • 1/2 cup sour cream
  • 1 tbsp traditional Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp coriander powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp lemon juice divided
  • 1/2 tsp garlic minced

INSTRUCTIONS

1

Add 17 oz chopped salmon into a food processor and pulse it several times. Scrape down the sides and repeat the process 3-4 times. We want a mixture with bits of fish instead of a mushy paste.

2

Dump the mixture into a bowl and, with a spatula, mix in the 1 medium egg, 1 tbsp mustard, 0.5 oz scallions, 0.5 oz cilantro, 1 tsp garlic powder, 1 tsp coriander powder, 1/2 tsp paprika, 1/4 cup breadcrumbs, 1/4 tsp salt and 1 tsp pepper, and 1/2 tsp lemon juice.

3

Wet your hands and form 4 patties. Place the patties onto a wide surface, such as a large cutting board or baking sheet.

4

In that same pan, melt 1 1/2 tbsp butter and sear the patties for 5 minutes on each side. Take them out and place them onto a large, flat dish.

5

In a small bowl, whisk together 1/2 cup sour cream, 0.5 oz parsley, 1/2 tsp garlic, and the remaining lemon juice (1/2 tsp).

6

Melt the remaining butter (1 tbsp) in a grilling pan over medium heat. Sear the buns for 2 minutes or until they are charred a bit. Take them out of the pan.

7

Assemble the burgers: bottom bun, arugula, tomato slices, red onion slices, the patty, sauce, and the top bun. Serve these burgers right away!
