- 20 oz potatoes 4 potatoes
- 1/2 tsp olive oil
- 1/4 tsp salt
- 1/4 tsp ground pepper
- 1/4 cup plain Greek yogurt
- 1/4 tsp thyme
- 1 tbsp scallion
- 1 tbsp unsalted butter
- 2 tbsp shredded cheddar cheese
- 0.75 oz oven-baked bacon
- 1 tsp cilantro

- Use a fork to pierce the skin of each potato in several places. Then brush the olive oil onto the skin.
- Place potatoes in the basket of an air fryer and cook at 360°F for 40 minutes.
- Remove potatoes from the basket and let them cool down. Then cut along the top of them and scoop out the flesh inside.
- In a bowl, add the potato flesh, salt, pepper, yogurt, thyme, scallion, butter, 1 tbsp cheddar cheese, and 0.5 oz bacon. Mash filling until smooth.
