How to Make Cheesy Hashbrown Breakfast Casserole

This is a simplified step-by-step recipe:

Step 1: Soak the potatoes

In a large bowl, place the shredded potatoes and fill the bowl with cold water. Let it sit for about 10 minutes.

Step 2: Swish the potatoes

With your hands, swish the potatoes to release the starch. Drain the water out. You can repeat this step for one more time or until water runs clear. 

Step 3: Preheat the oven

Preheat the oven to 375 °F.

Step 4: Stir the meat

Heat the skillet on medium heat, then add beef and butter to the skillet. Stir frequently until the meat is cooked. Transfer it to a bowl and set aside.

Step 5: Stir the vegetables

Add butter, and any of your favorite vegetables and saute until tender. Add the beef back to the skillet.

Step 6: Season the meat mixture

Season with salt and pepper. Then stir in sour cream. Simmer for some minutes until all the ingredients are combined and well-seasoned.

Step 7: Season the potatoes

Season the shredded potatoes with salt and pepper. 

Step 8: Place ingredients into a baking dish

Turn the mixture of beef and vegetables out into a baking dish. Then spread the potatoes over the beef mixture.

Step 9: Bake

Bake until the potatoes are tender. Remove the baking dish from the oven and sprinkle cheddar cheese and bacon on top of the potatoes, then return the casserole to the oven for 5 minutes more.

Step 10: Serve

Garnish with scallions if you like. Serve hot.

To use frozen hashbrowns to make the casserole, you should thaw them before baking to avoid excess water. Then cook them as you would regular hashbrowns.

Another way is to thaw them in the microwave, then squeeze the excess moisture to get your desired texture.

Loaded with creamy cheese and all the goodness from meat and potatoes, this cheesy hashbrown breakfast casserole recipe is so delicious. It’s also easy to make, so you won’t have to visit any restaurants for this dish. Serve it with fried eggs for a nutritious breakfast, or with vegetables for a quick weekday dinner.

Ingredients
 

  • 36 oz potatoes
  • 1/2 tbsp olive oil
  • 6 oz onion
  • 2 tbsp all-purpose flour
  • 2 tsp garlic
  • 2.5 oz cheddar cheese
  • 1 tbsp parsley
  • 1/8 tsp black pepper
  • 1/8 tsp nutmeg
  • 1/2 tsp salt
  • 1 1/4 cup milk
  • 1/2 cup unsalted chicken broth
  • 1/2 tbsp unsalted butter
  • 0.5 oz baked bacon
  • 1/2 tbsp heavy cream
  • 0.5 oz ham

Instructions
 

  • Use a fork to pierce the skin of each potato in several places. Place the potatoes on a foil in the middle rack. Bake the potatoes in the oven at 445°F in 30 minutes.
  • Let the potatoes cool down a little bit before peeling them. Then shred the potatoes and put them in a large bowl.
  • In a non-stick pan, melt butter over medium heat. Add onion, garlic and ham, and stir fry them in about 3 minutes or until golden brown.
  • Add flour to the pan, stir frequently until well combined. Then pour the chicken broth into the pan and reduce the heat.
  • Add in heavy cream, milk, 0.5 oz of cheddar cheese, nutmeg, salt, and pepper. Bring the sauce over high heat until the boil. Remove the pan from heat.
  • Preheat the oven to 395°F.
  • In the shredded potatoes, pour the bechamel sauce over. Gently mix potatoes with the sauce.
  • Use the olive oil to grease a baking dish. Transfer the hash brown mixture to the baking dish.
  • Sprinkle the remaining cheddar, bacon, and ½ tablespoons of parsley. Place the baking dish on the lower rack and bake for 15 minutes or until the cheese is melted.
  • Garnish with parsley. Serve hot.
