Is Our Watermelon Carrot Juice Healthy?
Watermelon is a powerhouse of antioxidants, particularly lycopene, a compound that may aid in the prevention of cancer and diabetes. Watermelon-based beverages have been shown to significantly reduce muscle soreness and even boost athletic performance.
Additionally, a watermelon bite contains approximately 92 percent water, making it an extremely hydrating fruit.
Due to the natural sweetness and low-calorie content of watermelon, sweetening your watermelon smoothie is optional. You can either add a tiny dash of sugar or replace the sugar with honey or maple syrup in a 1:1 ratio.
Carrots and their derivatives are well known for their anti-inflammatory properties. Carrot juice is nutrient-dense, containing vitamin C, which helps strengthen the immune system, and potassium, which aids in sodium regulation.
It is most well-known, however, for its vitamin A content, which promotes eye health. Consuming more vitamin A-rich foods has been linked to a lower risk of cataracts and blindness in the eyes.
On the other hand, carrot juice is versatile, as it, along with apple juice, is a component of this recipe.
Main Ingredients
Here are the main ingredients for today’s watermelon carrot juice recipe:
- Carrot: These root vegetables are great because they can be eaten raw or cooked and turned into a healthy drink.
- Watermelon: In this watermelon smoothie recipe, we used a red watermelon. We’re accustomed to using red watermelon in many recipes, plus, it’s also easy for us to find.
- Lemon juice: A touch of lemon juice will give your juice a fresh, citrus flavor.
- Sugar: We only need a tiny bit of sugar for this recipe.
- Mint: We love to garnish our drinks with mint but it’s not necessary for you to do the same.
- And ice.
Do You Need to Peel Carrots Before Juicing?
You don’t need to if you’re feeling lazy, but you do need to wash them thoroughly.
Cleaning carrots does not require anything extraordinary. Simply wash them under running water or in a large bowl of tap water.
I'd recommend investing in a vegetable scrubber if you haven't already. These scrubbers are capable of scraping away ingrained dirt and chemicals that you may have been unable to reach in the past. Alternatively, you can scrub the area with a toothbrush to achieve the same result.
Before using your carrots in your juicer, I recommend scrubbing them for at least 30 seconds to remove any visible dirt.
One tip is to soak your carrots for around 15 minutes in a bowl of cold water before scrubbing them. This will soften and make it easier to scrub the carrots. Additionally, it will dislodge dirt from the cracks and crevices of your vegetables.
Storing and Freezing the Leftovers
Our watermelon carrot juice can last for about 2 days in the fridge. If you want to, you can even make a big batch of juice and freeze it for a month.
Allow the juice to defrost in the fridge overnight before serving.
How to Tell If a Carrot Is Bad
Appearance: Certain carrots may develop dark spots. This does not necessarily mean they have gone bad, and those that have can be removed prior to use.
However, if you notice mold growing on them, they've gone bad and should be discarded. Do not attempt to remove the mold, as its roots penetrate surprisingly deeply into food.
Feel: When carrots begin to rot, they become soft and floppy. This does not, however, mean they are unusable (see below).
However, if they feel slimy, they have spoiled and should be discarded.
Smell: Rotten carrots emit a pungent odor. Whole carrots should have no odor when they are fresh.

INGREDIENTS
- 22 oz watermelon (peeled and cut into chunks)
- 8 oz carrot (peeled and cut into chunks)
- 1/2 tsp lemon juice
- 1/2 tbsp sugar (optional)
- 8 mint leaves
- 2 cups ice
INSTRUCTIONS
Extract the juice: Put 22 oz watermelon and 8 oz carrot through the chute of your juicer. Place a jug under the nozzle to collect the juice and another bowl for the pulp. Discard the pulp.
Add the remaining ingredients: Add 1/2 tsp lemon juice, sugar to your taste but no more than 1/2 tbsp.
Stir until everything is well-mixed.
Pour into four tall glasses. Garnish with a sprig of mint and serve with 2 cups ice.
