In this buffalo chicken salad recipe, the dressing is made by whisking together ground black pepper, mayonnaise, sour cream, garlic, parsley, and lime juice. Of course, each of these components can be adapted to your taste.

1. Buffalo Sauce

Our buffalo sauce is made of melted butter, bird’s eye chili, and jalapeño. As we prefer a lean and mild-tasting salad that’s not too spicy or greasy, we decided to use a homemade version.

Homemade buffalo sauce takes only a few minutes to put together. It can jazz up your dish, whether it’s baked or fried chicken.

You only have to spend a minimal amount of time creating a batch of buffalo sauce. A big jar of buffalo sauce is enough to last for six months!

The homemade sauce also brings convenience as you have full control to make it entirely to your taste. If you like it spicy, feel free to add Frank’s red hot buffalo sauce. Or substitute with soy sauce for another dish you can easily make at home.

However, as this uses no preservatives, this homemade version has a significantly shorter shelf life than commercial ones. It also needs a week of fermentation before use, so please note this to make the best choice for your dishes.

Homemade buffalo sauce easily keeps for six months in a cool, dark location (like a low cupboard). You can also refrigerate it for a long-lasting period.

2. Greek Yogurt

To keep things lighter in taste, we suggest swapping mayo for Greek yogurt.

In comparison to regular mayonnaise, Greek yogurt is much lower in both calories and fat. For a similar consistency, we suggest using a 1:1 ratio when swapping these ingredients.

So buffalo sauce and greek yogurt are the two main elixirs. But sour cream is another extra we like to add to achieve an almost perfect dish.

How to Make Chicken Salad With Buffalo Sauce

Marinate the chicken: Marinate the chicken with salt, honey, onion powder, garlic powder, 1/2 tsp of ground black pepper, cayenne pepper, paprika, 1 tbsp of scallion, and buffalo sauce. Let sit.

Sear the chicken: Sear chicken over medium heat in a skillet with 1 tbsp of olive oil.

Step 3 make dressing

Make the dressing: Whisk together 1/4 teaspoon of ground black pepper, mayonnaise, sour cream, garlic, 1 tablespoon of parsley, and lime juice.

Assemble: Prepare a bed of romaine lettuce and assemble the chicken, carrots, and cherry tomatoes on top. Drizzle the dressing, and sprinkle the remaining parsley and scallions.

  • 10 oz skinless boneless chicken breast chunked
  • 1 tbsp honey
  • 1/8 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder

  • 1 tsp cayenne pepper
  • 1/4 tsp paprika
  • 2 1/2 tbsp homemade buffalo sauce

  • 2 oz red bell pepper julienned
  • 1 tbsp sour cream

Instructions
 

  • Marinate the chicken with salt, honey, onion powder, garlic powder, 1/2 teaspoon of ground black pepper, cayenne pepper, paprika, 1 tablespoon of scallions, and buffalo sauce. Let sit for 5 minutes.
  • Sear chicken over medium heat in a skillet with 1 tablespoon of olive oil.
  • Allow the chicken to cool down and, while waiting, make the dressing: Whisk together 1/4 teaspoon of ground black pepper, mayonnaise, sour cream, garlic, 1 tablespoon of parsley, and lime juice.
  • Place a bed of romaine lettuce on a large plate, then assemble the chicken, carrots, and cherry tomatoes on top.
  • Drizzle the dressing, and sprinkle the remaining parsley and scallions. Toss everything together and enjoy.
