Are Our Fried Salmon Patties Healthy?

Yes, they are relatively healthy.

For fried foods, the main concern has always been the cooking oil. In this recipe, we use canola oil for deep frying the patties.

Canola oil is a popular ingredient used in many deep-fried dishes, thanks to its high smoke point and neutral taste. Moreover, the level of unhealthy saturated fats in it is also one of the lowest of all cooking oils.

As only part of the oil used is actually absorbed into our dish, we were able to keep the total saturated fats at a very lowly 2.5 g and the total calorie count at 251 cal per serving. 

Are Our Fried Salmon Patties Healthy

As for the main health benefits of this dish, all credits must go to the salmon, which is a superfood packed with many essential nutrients, including protein and omega-3 fatty acids. 

Consuming salmon regularly is known to be beneficial for your body and brain, and can lower the risks of cardiovascular diseases.

Ingredients for This Recipe

Salmon patties are made up of a base (salmon flesh), a binder (eggs), and an extender (cornflakes, breadcrumbs, or crackers). Let’s take a quick look at the ingredients needed for each part:

  • The base: We use fresh salmon fillets for the best taste and texture. If you have to use canned salmon, then go with high-quality ones.
  • The binder: We use one medium egg for 4 servings.

  • Seasonings: We add pepper, lemon juice, onion, parsley, mayonnaise, scallion, and cajun seasoning to enhance the rich savory taste of the salmon. We also add flour to thicken the mixture, and canola oil is used to deep-fry the patties.

For the sauce, we simply mix Japanese mayonnaise and plain Greek yogurt. This combo produces a slightly sweet and tangy taste with a creamy texture that perfectly complements the buttery flavor of our salmon patties.

How Do You Keep Salmon Patties From Falling Apart?

First, your salmon mixture must be of the right consistency and should not be too dry or watery, else it could fall apart while cooking.

If the mixture feels sloppy, keep your patties in the fridge for at least half an hour before frying. In contrast, if it feels too dry, add a bit more of the egg fluid.

While frying, don’t flip too much. Simply cook each side fried of the patties until brown, then transfer to a serving plate when done.

Ingredients
 

  • 1/2 tsp pepper
  • 1 tsp lemon juice
  • 2 oz onion diced
  • 2 tbsp parsley chopped and divided
  • 1 medium egg
  • 10 oz skinless salmon
  • 1/4 cup plain panko breadcrumb
  • 3 tbsp Japanese mayonnaise divided
  • 2 tbsp plain Greek yogurt
  • 1/4 cup scallion diced
  • 1.5 tsp cajun seasoning
  • 1/2 cup canola oil (*)
  • 2 tbsp all-purpose flour

  • For the salmon: Rinse the salmon fillet with clean water, then pat dry using a paper towel to prevent a mushy texture. Cut the fillet into small pieces about 1 to 2 inches and place into a glass bowl (for microwaving).

  • Microwave the salmon: Add the salmon cubes to a bowl, cover with plastic food wrap, then microwave for 5 minutes.

  • Mash the salmon: Use a fork to mash the salmon until it reaches the same consistency as in the clip.

  • Mix the salmon with other ingredients: Add to the mashed salmon 1/2 tsp pepper, 1 tsp lemon juice, 2 oz onion, 1 tbsp parsley, 1 medium egg, 1/4 cup plain panko breadcrumb, 1 tbsp Japanese mayonnaise, 1/4 cup scallion, 1.5 tsp cajun seasoning, and 2 tbsp flour. Gently stir to mix.

  • Shape the patties: Use your hand to form the salmon patties.

  • Fry the patties: Add 1/2 cup canola oil to a frying pan and let it simmer over medium heat, then place the salmon patties in. Deep fry the patties for a total of 4 minutes, with 2 minutes on each side. When the patties turn golden brown and crispy on both sides, transfer them to a serving plate.
